  • Prawn U30 2kg
  • Red Chili 250gr
  • Bird Eye – Chili 15gr
  • Onion, finely chopped 150gr
  • Garlic, finely chopped 50gr
  • Tomato 200gr
  • Smoked Paprika Powder 30gr
  • Chili Powder 10gr
  • Lime Juice 30ml
  • Fish Sauce 30ml
  • Wonton skin 1pack
  • Micro green 1pot
  • Salt & Pepper

Preparation – Vivre

  1. Bring a saucepan of salted water to a simmer over medium heat. Add prawns and cook for 2 minutes or until just cooked. Remove with a slotted spoon and cool slightly.
  2. Pre-heat sauté pan and add oil. Add the chili, shallot, garlic and sauté until all the ingredients is soft. Add tomato. Cook for 3 to 4 minutes. Remove from the heat.
  3. Add into food processor, blend until smooth. Return to the pan. Cook for another 3 minutes.
  4. Add Paprika & chili powder. Lime juices and Fish Sauce. Stir to combine. When Chili Jam is Ready, Set aside
  5. Slice the wonton skin and deep fried until crisp. set aside
  6. Pre-heat sauté pan and add oil. Sauté blanched prawn for 1 minute. Add chili Jam and stir to combine.
  7. Arrange duck spoon, and put 1 pcs of the prawn. Garnish with fried wonton skin and Micro green coriander.
