  • Beef Brisket, slow-cooked and finely diced 2kg
  • Manchego Cheese 1kg
  • Potato 5kg
  • Celery 60gr
  • Leek 100gr
  • Nutmeg 15gr
  • Fresh Egg 15pcs
  • All Purpose – Flour 1kg
  • Bread Crumb 2kg
  • Salt & Pepper

Preparation – Vivre

  1. Peel, wash and steam the potato for 30 minutes
  2. Mash the steamed potato finely
  3. Add sliced celery & leek and seasoning with salt & pepper. Set a side
  4. Prepare and cut Manchego cheese and braised beef into Small Pcs. for stuffing.
  5. Take seasoned mashed potato and add cheese & beef cube in the center. Round the mash potato to perform a small Ball
  6. Breaded the potato ball with flour, egg and bread crumb.
  7. Place the Croquette in GN Pan with Baking tray under liner & Cover with plastic wrap. Store in to Freezer | Label & Date
