  • Asparagus 500gr
  • Onion 60gr
  • Garlic 30gr
  • Cooking Cream 300ml
  • Carrot 100gr
  • Green Peas 100gr
  • Thyme 6gr
  • Cooking Oil 50ml
  • Vol Au Vent 50pcs
  • Micro Green 1pot
  • Salt & pepper

Preparation – Vivre

  1. Heat oil on the pan, sauté garlic, onion, chopped thyme, ham, carrot. Pour cooking cream and green peas for the last. Seasoning with salt & pepper. Put a side.
  2. Peel and clean the Asparagus, blanch for few second and soak on the ice water to keep the color.
  3. Layer Vol Au Vent on tray, stuffing with sautéed ham, and asparagus on top and garnished with micro green.
